Taulissa bar plays with elegance and surprise, subtly challenging the classics without ever betraying them. Among our house creations: Gin paired with Yellow Chartreuse, infused with pear and highlighted with a hint of dill, offering a nuanced freshness. Another signature creation is the bold pairing of mezcal, Campari, and hazelnut butter, delivering a smoky and velvety depth, unexpected yet perfectly balanced. Then there’s the "Tequila Champagne Céline" - a delicate nod to Joseph Perrier champagne and its Cuvée « Céline » Extra Brut - which brightens the palate with citrus notes and effervescence.

The art of tasting

Local products are never far off: in several recipes, you will find the Maralpa gin from Nice, or artisanal liqueurs made from verbena, fir, or citrus, carefully distilled in the region. To accompany these cocktails, a few carefully chosen plates: a focaccia topped with foie gras, seasonal rillettes, crunchy pickled vegetables, and those melt-in-your-mouth truffle arancini that hit the spot with every bite.
